HISTORY OF LA SIERRA

WHO ARE WE

We are a family-owned business specialized on agriculture for several generations. We have learnt to fuse tradition and experience in this sector, Hemos sabido unir nuestra tradición y experiencia en este sector, dating back since 1750 according to our writings, nature friendly (phytosanitary treatment free against plagues, except on rare occasions when fighting the olive fly when is necessary). Also we evade any foliar contribution when the fruit is developing (zero residues register), this combined with nowadays technological innovation to achieve the best quality on our oil.

The oil exploitation is located on Jaén province among three regions (Peal del Becerro, Larva and Cabra del Santo Cristo) and belonging to two protected origin denominations, one being Sierra de Cazorla and Sierra Mágina the other two.

The oil variety is Picual, early harvest when the olive is still green, which is characterized by its flavor and aspect. The procedures used on the recollection aim to protect each fruit until it is pressed so it conserves its properties and quality, this is achieved by the use of an umbrella and shaking the tree without sticks at night in the Premium gama.

The recollection period is set between early October and late November. Starting when the monitoring tells us is the optimus time and ending before the December frosts.
