The oil exploitation is located on Ja\u00e9n province among three regions (Peal del Becerro, Larva and Cabra del Santo Cristo) and belonging to two protected origin denominations, one being Sierra de Cazorla and Sierra M\u00e1gina the other two.<\/p>\n
The oil variety is Picual, early harvest when the olive is still green, which is characterized by its flavor and aspect. The procedures used on the recollection aim to protect each fruit until it is pressed so it conserves its properties and quality, this is achieved by the use of an umbrella and shaking the tree without sticks at night in the Premium gama.<\/p>\n
The recollection period is set between early October and late November. Starting when the monitoring tells us is the optimus time and ending before the December frosts.<\/p>\n
